eggplant cordon blue

Technically, the term cordon bleu is French and is meant to depict a dish of meat that’s wrapped around cheese, breaded and then pan-fried, in this eggplant cordon bleu recipe though we have added an Italian twist and eggplants have replaced the meat portion. In this recipe, eggplants marry provolone cheese and tasty ham, for a tasty dish that can be used as an appetizer or side dish.

The recipe is very easy, you will need about 20 minutes to prepare. Make sure you choose a nice eggplant that is firm and fresh. So get your pan ready and fry up a batch of tasty cordon bleu eggplants for your family or friends!

Ingredients:

  • 1 eggplant
  • Half pound of provolone cheese in slices
  • Half pound of ham in slices
  • 2 eggs
  • Flour as needed
  • Bread crumbs as needed
  • Olive oil for frying
  • Sauce (optional)

Wash the eggplant and peel it. Slice the eggplant in several thin slices. Grab an eggplant slice and layer on top a slice of provolone and then a slice of ham. Cover with another eggplant slice to make a sandwich. Beat the 2 eggs together. Dip the eggplant sandwich first in the flour, then in the egg and then in the breadcrumbs. Now, warm up the oil and deep fry the eggplants until the are nice and golden.Place on paper towels to absorb the excess oil. You can now cover them with some sauce and extra provolone cheese for an extra touch.
