Tuna and Pasta Frittata

 

If you have some leftover pasta, don’t toss it! You can make a tasty pasta and tuna frittata that will be the highlight of the day. Technically, any shape of pasta can work, but the most adept ones for this project are spaghetti and penne. Left over pasta tends to be softer when it is cooked again, and this quality makes it a good choice for being recycled for a tasty frittata. This is a very flexible recipe, so don’t be afraid to experiment and add some ingredients you have in your fridge. Below you can find a list of some extras that we have found to be particularly tasty to add.

We like to use chunky canned tuna for this recipe, not the type that breaks apart too easily when you pour it out of the can. The best tuna comes out whole or at least in big chunks when you get it out of the can. Good quality tuna should not look like cat food! In Italy there is famous brand of tuna where it’s advertised as being so tender that it breaks apart with a bread stick. We also prefer to use tuna that is conserved in extra-virgin olive oil. Tuna in water isn’t great tasting as tuna in water.

Tuna in oil may cost a little more, but it is worth it when it comes to taste and consistency. This recipe used tuna in olive oil, but don’t toss out the oil, you will need it! So here is a great recipe for a tasty pasta and tuna frittata.

Ingredients:

  • 1 cup of leftover cooked pasta
  • 3 eggs
  • 1 can of tuna conserved in oil
  • 1 garlic clove
  • 2 tablespoons grated Parmesan cheese

Preparation:

Chop the garlic. In a bowl, mix the eggs with the grated cheese. In a large frying pan, pour the oil from the can of tuna and the chopped garlic. Let the garlic get a bit of color and add the tuna in chunks along with the leftover pasta. Mix the pasta with the tuna and garlic so that the flavors spread throughout. Pour the egg mix over the pasta and let it spread evenly. Let one side cook well and then turn the frittata with the help of large lid. Serve and enjoy!
