Tiramisu’

Very easy and fast to prepare, the tiramisu’ is a classic Italian dessert, so creamy and delicious and loved everywhere. With this dessert the success is guaranteed!

Ingredients for 8 people:

30 ladyfinger cookies
6 egg yolks
strong brewed coffee as needed
1/2 cup white sugar + 2 tablespoons for the coffee
17 ounces of mascarpone cheese
unsweetened cocoa powder as needed
dark chocolate shaved or grated as needed
2 tablespoons of rum optional

Direction:

First separate the egg yolks from the egg whites. Put the 6 egg yolks in a large bowl and add 1/4 cup white sugar (half of the sugar). Beat really good using an electric mixers until the mixture goes pale, thick and creamy, and the sugar is completely melted, then add the mascarpone cheese and whisk until everything is smooth.
In a medium bowl, beat the egg whites with the remaining sugar (1/4 cup) until stiff peaks form.
Pour everything into the large bowl with the mascarpone mixture, then gently mix with a whisk until it gets smooth and very thick.
In a small shallow dish, add the strong brewed coffee as needed, you can also add as much sugar as you want in the coffee, that’ totally up to you;if you want to add some rum you can add it to the coffee, but that’s totally optional.
Now let’s take a rectangular or squared baking dish big enough to fit two layers of ladyfinger cookies and let’s start composing our tiramisu’. Soak the ladyfinger cookies in the coffee one at a time for about five seconds (do not soak them too much or they will brake) and make a layer inside the baking dish to cover the entire bottom breaking them in half if necessary.

After placing the first layer of soaked ladyfinger cookies (about 15 of them for the first layer), add half of the mascarpone mixture on top and spread it out evenly. Now dust the top with unsweetened cocoa powder as needed to cover the entire surface.
Repeat a second layer with remaining soaked ladyfinger cookies (you should have 15 left), but if in the previous layer they were placed horizontally, this time place them vertically and vice versa. Terminate the second layer by adding the mascarpone mix (the other half remaining). Level up the mascarpone mixture evenly throughout the entire surface, then, dust the top with unsweetened cocoa powder as needed to cover the layer.
Place the dish in the refrigerator and let it cool down for 2-3 hours to let it set.
Before serving, sprinkle the top with dark chocolate shaved or grated as needed; you can also add strawberries for decoration. Now enjoy!

Warning

The eggs are raw, therefore it is very important to verify the freshness of the eggs before using them.

Conservation

Preserve the tiramisù, closed in a sealed container and placed in the refrigerator, for two days top. If you want you can also freeze it, maybe divided in portions, and eaten within a month at the most. Before eating it leave it in the refrigerator overnight.
